Catalan gastronomy is experiencing its greatest international exposure, where romesco has all the potential to become a renewed and attractive icon.

A living recipe book that can evolve, be reinterpreted, and engage in dialogue with contemporary cuisine without losing its essence. For this reason, it needs to be recovered, but also researched, cooked, explained, and incorporated into current gastronomic circuits, both inside and outside our territory.
